What is Red Star Chocolate?
Single-origin chocolate bars from different regions of the world, each with their own distinctive taste profiles. Each manufacturing process takes place in-house, from the initial cleaning of the cocoa beans through roasting, grinding, conching, tempering and moulding; total control of every aspect.Each small batch of single-origin beans is granite-ground in a slow-revolving conch for between 40 and 70 hours, allowing the inherent complex flavours enhanced by the sympathetic roasting of top-quality beans to fully develop.
The batches will be small and the taste of each batch may differ slightly – there is no attempt to disguise the flavour, no attempt to blend and homogenise
so that each bar is predictably the same year after year.
Why start Red Star Chocolate?
After 25 years of making racing cars it was time for another challenge – trying to make the best chocolate in the world. An easy thing to type and a harder thing to achieve but possible, maybe, with time I resolved to develop and sell a small range of the highest quality chocolate bars made from cocoa beans from around the World. As a small artisan bean-to-bar producer I can use the best ingredients and keep it simple – no additives. Nothing added to make it easier to mould or to make it shinier or to reduce the bubbles, nothing added to reduce the production costs. I can have fun with the packaging and give the mainstream a miss.
